Learning outcomes

The aim of the course is to bring to the student's knowledge some type of plants and of process formed by the composition of different devices and equipment considered in the three-years course (Operazioni Unitarie e Impiantistica Alimentare). The student coming from other Courses or Universities are strongly suggested to respect this priority.

Course contents

Nomenclature and symbology of the plant diagrams. Choice and calculation of the pumps. Special alimentary pumps, valves, seals. Methods and plants for concentration, pasteurization, sterilization, crystallization, lyophilization, drying, homogeization, granulation.
