Learning outcomes
The course is aimed at providing students with knowledge both on the origin and chemical nature of xenobiotics in food of animal origin and on the biochemical mechanisms of interaction of these compounds and/or their metabolites with animals.
Course contents
Definition of xenobiotics, chemical nature, origin (accidental, intentional, toxicants produced by chemical and/or physical treatment) in food of animal origin (meat, milk, eggs, honey and derivatives, animal food). Supertoxic xenobiotics (dioxin-like PCBs, dioxins). Toxic compounds of natural source. Functional food. Aspects of arising problems in food of animal origin: BSE, OGM. Uptake and storage of xenobiotics and their metabolites in animal tissues: residues in food and biochemical mechanisms involved in the genesis of the effects on the consumers. Methods of extraction and determination of xenobiotics in foodstuff.

Teaching methods
Lessons will deal with the subjects listed in the programme and will be illustrated with the aid of projection of transparencies. The deepening of the subjects will depend on the previous knowledge of students. The course will be accompanied by practical lab trials.
Assessment methods
The exam consists of a final oral test. Oral tests on part of the programme may be carried out during the course.
